Because Snow Always Makes Me Think Of Comfort Food

So, I know what you're all thinking: "Finally - FINALLY - something to distract her from that china hutch!" Well, yes, as a matter of fact, I am easily distracted by food. Especially when it's yummy breakfast comfort food. And I do like to really cook breakfast when we are off for snow days. That's what the world needs! More snow days!

Anyway, so yesterday I ran out of our boxed pancake mix, and I was still craving pancakes this morning. And, y'all? Why do I even do the box stuff? From scratch pancakes are really just about as easy and taste ten million times better. And then multiply that by about ten million more times better when you and sit and eat them and gaze longingly at your almost completed china hutch. So there.

Yummo Homemade Pancakes

Prep Time: 5 minutes
Total Time: 15 minutes (??)
Makes: around 14-15 four-inch pancakes

  • 1 1/2 cup all-purpose flour
  • 3 1/2 teaspoons baking powder (don't mistake for baking soda)
  • 1/2 teaspoon salt (y'all! it's the 'salty and sweet' winning combo!)
  • 1 tablespoon white sugar
  • 1 1/4 cup milk (I used skim)
  • 1 egg
  • 1 teaspoon vanilla
  • 3 tablespoons butter, melted (oh yes! definitely used real butter!)

In a large bowl, sift together flour, baking powder, sugar, and salt. Sift well to make your pancakes lighter and "fluffier." Make a well in the center, and pour in the milk, egg, vanilla, and butter. Mix until smooth. Heat a lightly greased (again, I used butter) pan over medium-high heat for about five minutes. After that time, pour a quarter cup of batter into the pan. [Obviously] brown on both sides and serve hot. Be ready for rave reviews. OR, tell the kids breakfast "will be a while" and eat every one of those doggone pancakes yourself.
